Wine lovers are often told that luscious fruity red wine are the perfect match for chocolate but as we approach the Easter chocolate festival, we respectfully disagree. We think you need to go towards contrasts, to enhance the chocolate, not compete with it. You would not enhance a bar of chocolate by smearing it in strawberry jam, so think, contrast not excess. And as the fashion for hipster, High Cocoa value, slightly bitter, grown up real chocolate makes an even bigger impact each year, an over sweet wine makes the chocolate appear even more bitter. The solution, a wine that has savoury tones, ring fenced by sweet glimpses, like this glorious Tannat, the pride of Argentina's highest vineyards and with the Andes as your base, Bodegas Callia work vineyards at 1300 meters, thats higher than any mountain in Ireland. Think farming on top of Carrauntoohil, or perhaps in this case, Croagh Patrick. A hard won delight.
