Fugu, better known to the world and The Simpsons fans as Japanese pufferfish, is a delicacy that you swallow with considerable risk. Extremely poisonous, it is illegal for most restaurants to even serve, and chefs must apprentice for a decade before they earn the right to legally do so.

The Great Big Story YouTube channel spoke to the fugu expert Yutaka Sasaki, a chef with more than 45 years experience preparing the raw fish. The short video explains how he goes about serving the potentially lethal dish, slicing it raw and adding a few garnishes.

“It’s an indescribable taste,” Sasaki explains. “It’s mysterious, it’s delicious. Really delicious.”
