As TV chef, food writer, author and proprietor of Ballyknocken House & Cookery School, Catherine Fulvio should know a thing or two about cooking.
And as it's Pancake Tuesday today, she came into Newstalk Breakfast to give Ivan and Chris the lowdown on making the perfect pancake.
Ivan's initial attempt nearly burned down Newstalk studios, so we thought he could use all the help he could get.

Ingredients
- 110g (4oz) plain flour
- Pinch of salt
- 2 large eggs
- 220 mls milk
- 75 mls water
- 40-50g butter
Instructions
- Mix your dry ingredients together: flour, salt.
- Melt butter and add to eggs, milk and water.
- Add your wet ingredients in with your dry.
- Whisk together but don’t over whisk.
- Leave batter for at least 30 minutes to let the flour expand. If you leave it in the fridge, take it out after 30 minutes and bring to room temperature or it won’t spread easily. If it’s too thick add milk.
- Melt some butter in the pan. Wipe off any excess with kitchen paper.
- Pan needs to be hot and non-stick if possible.
- Add a ladle of mix into the centre and swirl it fast. Put back on heat.
- It starts to set from the outside in so once its half way set get your spatula under the pancake and flip it.
Toppings
- The classic lemon juice and sugar
- Nutella and strawberries
- Apple compote and walnuts
- Mango and pineapple in lime butter with crème fraiche
- Spinach and cream cheese, topped with grated cheese and popped into the oven.
