Traditionally the local butcher has served a similar role as the local pub, Garda station or the post office all across the country and is one of the last community based retailers.

But with large retailers taking more and more of the business how are our butchers fairing?

That's the focus of this week's Industry Review, and to get the low-down on their businesses and experiences, Gavin was joined by:

  • Sean Kelly, owner of Kelly’s Butchers in Newport, Co Mayo
  • Rick Higgins, Master Butcher from Higgins Butchers in Sutton Cross
  • Hugh Maguire, ‘The Smokin’ Butcher in  Ashbourne, Co. Meath
