Seven new Michelin stars have been awarded to Irish restaurants this week. Five establishments entered the guide at one-star level, including The Oak Room at Adare Manor.
Aimsir, based at the Cliff at Lyons in Co Kildare, was awarded two stars on its debut, which is an Irish first. While The Greenhouse in Dublin received a second star.
But what exactly does it take to not only earn a Michelin star, but also maintain it year after year?
We wanted to find out more, so for our Industry Review this week we have invited Head Chefs of three Michelin Star restaurants into studio to chat about their business.
