A third of Irish people consider themselves “flexitarian”.  These environmentally conscious consumers are keen to lower their carbon footprint but they aren’t quite ready to give up their sausie sambo or Ribeye steak. Founder of vegan food company Thanks Plants Aisling Cullen has published a new report that indicates you can make a huge environmental impact, even as a part-time vegan.  Aisling told us more about the findings of the report.
