Butchers have seen a 40% rise in business since the pandemic started. Last year there was a nationwide campaign called Champion Green, asking us to support and shop local. But in 2021 what has changed? Henry McKean visited Dun Laoghaire and Glasthule in the heart of Dublin's Southside and met artisan coffee brewers, butchers, wine shops and food emporiums. Henry asked shoppers why have they gone high-end and why are they willing to pay more for quality?
