Tio Pepe Fino Sherry €12 - €18.00 widely available in supermarkets; Supervalu, Tesco, Dunnes, O’Brien’s, Nolan’s.
Fino is the lightest style of sherry and is BONE DRY with a salty and almond taste. Made in solera protected from oxygen under a layer of ‘flor’ which gives it a unique taste. Nice story about the most popular brand. Ideally paired with savoury nibbles, olives, fried fish, Spanish ham. Serve well-chilled, this style is made to be drunk in its youth while very fresh it doesnt keep at all once open.

Fernando de Castilla Amontillado €23 approx

Slightly off-dry sherry. This wine has deliberately been allowed to be in contact with oxygen so the colour is chestnut. The nose displays more intense nutty aromas. Best paired with salted almonds and charcuterie and olives. Amontillado is a stepping stone into some of the more complex styles of sherry.
