This recipe is a winner in the Air-Fryer. It can also be cooked in the oven or on a BBQ. The green sauce is full of flavour and works perfectly with any roasted or grilled meats and fish. The marinade for the chicken also works well on wings and even pork chops.
Spiced chicken thighs, coriander and mint sauce
Serves 4 people
Ingredients
- 8 bone in chicken thighs
- 100ms soy
- 2 Tbs, onion powder, coriander, paprika
- 1 Tbs cumin, oregano
- Juice one lime
- Olive oil
- Salt and pepper
Green Sauce
- 100g mayonnaise
- 100g crème fraiche
- Juice 1 lime
- ½ bunch coriander and mint
- 3 spring onions, 1 clove garlic,
- Pinch of salt and freshly cracked pepper taste
Method-
- Place all the above into a blender or bullet and blend until smooth
- To cook the thigh place in a bowl with the marinade and leave for 2 hours in the fridge
- To cook place into a pre heated air fryer at 200 skin side up and cook for 15 minutes, turn over and cook for a further 10 and finally turn skin side up and cook for further 5 minutes to crisp up the skin
- If you don’t have an air fryer place the thighs spread out evenly on your grill and place in the oven, roast foe 30- 40 minutes untill golden brown at 200 degrees
- Serve the green sauce on the side, a green salad, baby potatoes
