On tonight's programme, Oisin Davis, of Great Irish Beverages, makes a special seasonal cocktail called Smokin' Hops.
Oisin says, 'As I looked out my window this morning and noticed how damp and manky it was outside, I thought back to the recently passed summer when the temperatures were higher and many of us were abroad enjoying amazing sunshine. Like our one and only Rory who did a nice holiday stint in Mexico. Then I remembered that we still had some of that whopper mezcal he brought back from his hols so I figured I'd use some of it tonight. This is a cracking wee drink that uses some of that lovely Mexican spirit with an IPA and wee bang of spice, hence the name...'
SMOKIN' HOPS
50 ml quality Mezcal
25 ml lemon juice
15 ml agave syrup or sugar syrup
3 dashes of Tabasco Chipotle sauce
120 ml of quality Indian Pale Ale
METHOD:
Place mezcal, lemon, agave and tabasco in a shaker with some ice. Seal it and shake hard for 10 seconds. Strain into a long glass and top up with the cold IPA.
