Tonight's cocktail of choice is the Orange Blossom Special. Oisin Davis, of the Damson Diner, has concocted this beverage with inspiration from Johnny Cash's 1965 album of the same name.
Oisin says, "You can introduce interesting flavours to cocktails if you use just the right balance". The interesting flavour this evening is Orange Blossom Water, a concentrated floral cordial which should be used sparingly in any cocktail.

50 ml Maker's Mark Boubon
20 ml lemon juice
20 ml sugar syrup
2 dashes of cherry bitters
3 drops of orange blossom water
10 ml of egg white
Method:
Place the lemon juice and egg white together in the shaker and put the lid on. Shake for ten seconds.
Then place all other ingredients into the shaker with some ice. Shake hard for 30 seconds.
Strain into an iced tumbler. Garnish with a maraschino cherry.
