This week our resident mixologist Oisin Davis (of the Damson Diner) is recreating a Rum Coco from the 1964 classic, 'Night of the Iguana', which stars Richard Burton and Ava Gardner.

Oisin says, “Coconut Water is definitely having a moment. Yoga Junkies, health nuts and the morbidly hungover all swear by it's healing, hydrating qualities. When a product has such a broad fanbase, you can see why it has done so well.  Yet before it was regarded as a wondrous feel good elixir, it was more commonly used in Caribbean and Tiki cocktails, such as the Rum Coco which is featured in the 1964 film, "Night of The Iguana". Should you find yourself in a tropical land where one can enjoy super fresh coconut water, this drink may not carry the same name. It is more commonly called Coco & Rum, but that doesn't really matter too much.  What you need to know is how simple and yet marvellously refreshing this cocktail is. Be sure to give it a lash over this bank holiday weekend!"

If you would like to make a Rum Coco, here is what you will need...

INGREDIENTS
50 ml Havana Club 3 Year Old Cuban Rum
100 ml Coconut Water

METHOD
Combine the rum and water in a Collins glass with some ice. Stir it all up for a good ten seconds or so to get it nice and cold. Spray a little lime oil over the glass by running a citrus peeler over the zest. This will give it a little lift!
