Each Thursday Oisin Davis, of Great Irish Beverages, recreates a cocktail from a classic film. Tonight he is concocting the Rum Collins, as drunk by Sean Connery in 1965's 'Thunderball'.
Ingredients:

50 ml of quality rum such as Havana Club 3 Year Old

20 ml of fresh lime juice

20 ml of sugar syrup
- Sparkling water
Oisin Says: “Bearing in mind the fact that their independence referendum is taking place today, I did suggest last week that we should do a cocktail with Scotch Whisky. But then I was watching an early Bond movie with Sean Connery in it and I noticed that the villain offers James a Rum Collins. The film in question is 'Thunderball' and Sean Connery is the quintessential Scottish actor so I figured that was reason enough to serve up this drink tonight. It's exceptionally easy to make and with this Indian Summer still upon us, a long refreshing drink may still be in order”.
Method:
Fill a long glass with some ice. Place the rum, sugar and lime in a shaker. Throw in some ice, stick the lid on and shake for ten seconds. Strain into the long glass and top up with sparkling water. Garnish with a lime wedge or maybe a cherry if you can find one!
