In a slight change this week, to mark tomorrow night's clash between Ireland and Scotland, Oisin Davis of Great Irish Beverages, makes The Emerald cocktail. 

Here is what you will need:

  • 50 ml Jameson

  • 20 ml sweet Vermouth

  • 2 dashes of orange bitters

Oisin says, "Last week, we made a cocktail that Scottish bartenders in New York came up with. They were somewhat agitated that they had to make the Manhattan with what they considered to be an inferior whiskey to their own, American Rye. So they decided to take the same drink with their own spirit and that's how the Rob Roy cocktail came into being. But it was in the same city, in the latter part of the 19th century that a group of Irish bartenders decided that they could improve upon what the Yanks and the Scottish came up with. In the Waldorf Astoria Hotel, a couple of Irish emigrants working the bar there gave their own twist on this cocktail by removing the Scotch and adding Jameson. They also used orange bitters instead of Angostura. And that's how the classic Irish cocktail, The Emerald, was born.  It is in my opinion, a far superior cocktail than the Rob Roy. And I'm not just saying that because Ireland are playing Scotland on Saturday in a Euro 2016 qualifier. COYBIG!!”

Method:

Chill a martini glass with some ice. Stir all ingredients in an iced shaker. Remove the ice from the glass and strain the drink. Garnish with an orange twist.
