On tonight's show Oisin Davis, of Great Irish Beverages, makes a special Gin & Berry cocktail. 

Oisin says, 'Infusing spirits is another one of my rather boozy hobbies. At one point in my life it became a proper obsession but through some good self discipline, I've managed to get it back to being a hobby again. During the summer I finally got a nice crop of gooseberries in my back garden. They're such a lovely tart fruit and they go particularly well with gin. So I froze them to kill any bacteria and stuck them in a 2 litre jar along with some very nice Dingle Gin. At the same time, my neighbour still had some elderflower on one of his trees so I grabbed a couple of heads of it, gave them a quick rinse and stuck them in with the berries and gin. Somehow, I managed to not touch the gin until Christmas, which was my plan all along as I was throwing a couple of cocktail parties for family and friends over the holidays. But it would have been rude not to keep any for the lads so that's what we're imbibing tonight! This is most certainly not the season for summer fruits and flowers but you can still infuse some gin if you want. Here's how:

INGREDIENTS:

1 bottle of Dingle Gin
150 g of frozen berries

METHOD:

Sterilize a 1 litre kilner jar and throw in the berries. Then drop in the gin. Seal it and shake it for a few seconds. Then leave it in a cool dry place for at least 1 month but up to 3 if you want more depth. Strain out the berries through a sieve by pouring it all into a pot. Then put the gin into a bottle. If you want, you can sweeten it with honey or sugar syrup.
