Oisin Davis joins Tom Dunne to make a special cocktail inspired by the new Star Wars movie. 

Oisin says, 'Lots of people who have yet to see The Force Awakens will be going crazy over the next few days trying to make sure they avoid all spoilers. People like me. In fact, if Rory Cashin, our film reviewer, reveals any spoilers at all tonight, he shall be scratched from my Christmas list. But I don't think that I'll be revealing anything from the plot of the film when I say that the monastic County Kerry outpost of Skellig Michael features in it. And it is this UNESCO protected heritage site that I am dedicating this to, as it features a liquor from a spot not too far from there, Dingle Gin.

SKELLIG MICHAEL HOT PUNCH

INGREDIENTS:

200ml Dingle Gin

200ml sweet Madeira wine

50ml Dark rum

200ml Irish breakfast tea

Zest and juice of 1 lemon

Zest and juice of 1 orange

1 cored, peeled and sliced pineapple

1 teaspoon of cloves

3 cinnamon sticks

2 tablespoons of dark sugar

METHOD:

Combine tea, pineapple, orange and lemon peels and spices in a small covered pot. Simmer for about 20 minutes. Add gin and Madeira. Bring up to serving temperature uncovered. Adjust flavour with more citrus and dark brown sugar, to taste. Garnish with clove-studded orange slices.
