This week Oisin davis makes a special Hot Chai with Brandy. Oisin says, 'Down at this year's Electric Picnic, I felt myself drawn to the beautiful aromas of spice and honey making their way out of a small food tent in the Body & Soul area. The sun had gone down, I could feel the temperature drop down a few degrees and I looked over at the source of all that sweet spice, it was a stall selling hot mugs of chai - the Indian black tea that is mulled with cardamom, vanilla, clove and cinnamon and sweetened with honey. I was about to grab one for myself but I ran into a gang of pals and got distracted. Hours later, right when I was considering the walk back to my van a mate went and picked me up a mug out of the blue and handed it to me. It was delish and was perfectly timed! But he actually said, "Some brandy would be lovely in this!" So here you go...'
INGREDIENTS:
1 mug of hot Indian chai
1 teaspoon of honey
2 tablespoons of milk
35 ml Martell Cognac
METHOD:
Pour the tea into a mug and stir in the honey and milk. Then add in the cognac.
