On tonight's show Oisin Davis, of Great Irish Beverages, makes a seasonal cocktail with chestnuts.
Oisin says, 'Do kids play conkers any more? When I were a lad, we'd scour the entire south city looking for chestnuts to be a conkers champion. The biggest one you could find would be treated to ensure that it would be hardened properly. This would mean it would either be roasted in the oven, kept in the hot air press or if you were really conniving, you could coat it in a toxic glue that would turn it into a rock.But chestnuts do have culinary uses as well, maybe not necessarily the Irish ones though. They can be made into a nice puree or syrup that pairs beautifully with Jameson. This drink highlights the chestnuts, whiskey and other autumnal flavours really well'.
AUTUMNAL SLING
INGREDIENTS:
50 ml Jameson
15 ml chestnut syrup
5 ml Benedictine
15 ml lemon juice
100 ml dry Irish Cider
METHOD
Fill a long glass with some ice. Shake all ingredients except the cider in a shaker for 15 seconds. Strain into the glass and top up with the cider. Garnish with a sprinkling of cinnamon.
