Mixologist, Oisin Davis joins Tom for his weekly fix of a new cocktail mix.
For The Carrot Top, Oisin says; "In honour of the of Redhead Convention that's taking place this weekend in Cork, I had to come up with a drink with ginger in it. Perhaps if any of the carrot haired folk attending the festival need a spicy beverage or too, they could give this one a whirl. After all, even copper tops can't get by on Duracells alone."

INGREDIENTS
50 ml Havana Club 3 Year Old rum
20 ml ginger wine
5 ml ginger syrup
5 ml lime juice
A carrot ribbon
METHOD
Chill a coupe glass with some ice. Place the rum, wine, syrup and juice in a shaker with some ice. Seal and shake it hard for 10 seconds. Remove the ice from the glass and strain the cocktail in. Garnish with the carrot ribbon.
