Oisin Davis joins Tom this week to make a special Daiquiri cocktail. 

Oisin says, 'wander into a modern burger joint and you can find multiple versions of the one ground meat food dish. The same goes for pizzas. Between all the various toppings there are endless ways and means to enjoy one of the world's favourite food items. This same logic can be applied to cocktails. For every classic mixed drink, there are a gazillion twists on it that are very easily applied. Take for instance the daiquiri, which is essentially rum, lime juice and sugar. You can add lots of different types of fruits to it and very easily change the sweetening ingredient. I was recently served a daiquiri at a New Orleans pool party that had reduced cola syrup in it instead of sugar. And it was bloody marvellous! You just need to pour some coca cola in a pot and get the heat nice and high. Then reduce it by about 90 percent so that it's thick and concentrated. To make the whole cocktail....

INGREDIENTS:
50 ml of Havana Club 3 Year Old
15 ml fresh lime juice
15 ml of Coca Cola syrup
1 drop of Angostura bitters

METHOD:
Chill a martini glass with some ice.
Place all ingredients in a shaker with some ice and seal. Shake hard for 20 seconds. Remove ice from the glass and fine strain when pouring. Garnish with a lime slice.
