Tonight, Oisin Davis, of Great Irish Beverages, makes a Mezcal Margarita.
He says, 'Regular listeners of the show will know that Tom has a big grá for Margaritas. To make that super delish cocktail one needs tequila, lime juice and cointreau. But tequila has a rather sophisticated cousin called Mezcal. Both spirits are made with the agave plant, but tequila is distilled from steamed agave and mezcal is distilled with agave that has been roasted in clay pots. It has a lovely smokiness to it and supplies of it in Dublin are somewhat limited. So when Rory Cashin, our movie reviewer, said he was going to Mexico for a holiday I asked him very nicely if he could please bring me us back a wee bottle. And he didn't let us down!'
The Cashin Margarita
40 ml premium Mezcal
10 ml Amaro Meletti
10 ml Cointreau
15 ml fresh lime juice
Method
Chill a coupe or martini glass with plenty of ice. Place all ingredients in a shaker with ice. Seal it and shake hard for 20 seconds. Remove the ice from the glass and fine strain the cocktail. Garnish with an orange twist.
