On tonight's show, to mark the beginning of Dublin Gin & Tonic Festival, Oisin Davis, of Great Irish Beverages, pairs a gin and tonic with Kileen fenugreek spiced cheese.
Oisin says, 'the Dingle Gin as you may surmise from the name, is made down in Kerry. And their pot still is actually named, Oisín - which I can assure you, I had no part in. They actually use lots of local botanicals when distilling their spirit such as rowan berries and heather. Tonight we're pairing their gin with Killeen goat's milk cheese that has been flavoured with fenugreek. It actually works really well as the spice in the cheese matches the spice and floral tastes in the gin. And then to wash it all down, we'll be having the gin & tonic offering from Drury Buildings, the one they're doing for Dublin Gin & Tonic Fest. It's a gorgeous wee drink that's got the perfect balance of sweet and bitter. Sláinte!'
Ingredients:
35mls -Dingle Gin,
15mls of house made pink grapefruit, hibiscus flower and star anise cordial
Fentimans tonic
Garnish is pink grapefruit peel, hibiscus flower and star anise
Method:
Stir the gin and syrup together in a glass. Fill with ice, top up with tonic and garnish.
