This week, Oisin Davis, of Great Irish Beverages, makes a special gin & tonic using fresh peach.
INGREDIENTS
35 ml Glendalough Spring Gin
3 fresh peach slices
2 dashes of bitters
Schweppe’s tonic water to top up
Oisin says, 'Next week, the country's first celebration of Irish gin will be taking place. Dublin Gin & Tonic Fest is running in 30 venues across the city from Monday to Saturday and each one of them will be selling a discounted premium Irish Gin & Tonic. There will also be lots of Irish Gin and Irish food pairings including a gin and cheese pairing with Slow Food Dublin. And with 30 different venues examining how they can take the humble G&T and pimp it out, there's going to be some serious drinking to do! I, for one, will be sampling this one from The Pembroke Bar on Pembroke Street. They've gone for a fruity twist with their's, check it out and give it a go!

Stir all ingredients in a large wine glass and garnish with a mint sprig and lemon twist
