On tonight's Tom Dunne Show Oisin Davis, of Great Irish Beverages, makes a special Pomegranate Punch.
INGREDIENTS:
1 LITRE OF POMEGRANATE JUICE
4 LIMES, SLICED AND CUT INTO QUARTERS
50 G OF FRESH GINGER, WASHED AND CUT INTO MATCHSTICKS
HALF A FRESH POMEGRANATE
350 ML OF HAVANA CLUB RUM
250 ML OF GINGER ALE
Oisin says, 'three cheers for the Irish summer! But as we all know, it may well be gone by tomorrow, so you need to grab it by the pomegranate seeds and enjoy it! Especially with this here punch. It's jam packed with seasonal flavours, perfect for sharing with mates and best of all, it's laced with top quality Cuban rum that you can buy in any decent offie! This recipe is one I put together for the summer edition of the Supervalu drinks magazine, ‘Uncorked’. If you pop down to your local Supervalu you can find a copy of the magazine there. METHOD:
Pour the juice and rum into a bowl or pot, and stir. Then place in the fresh ginger and lime. Cover it up and let it sit overnight in a fridge. When ready to serve, pour into a jug with some ice and stir with the ginger ale and garnish with the fresh pomegranate seeds.
TIP: If you want extra spice with this drink, throw in a few star anise. They add a lovely depth!
