On this week's cocktail slot Oisin Davis, of Great Irish Beverages, makes a Ballymaloe Breakfast Martini. 

Oisin says, "Last weekend down at The Litfest in Ballymaloe, I was inspired by a great demo given by the master distiller of Beefeater Gin, Desmond Payne. He is originally from Cork and is actually a nephew of Myrtle Allen, founder of Ballymaloe House and of the great brand itself. Myrtle attended Desmond's wonderful demo and very much enjoyed his gins, at 92 years of age she still loves a nice G&T! One of the many gifts that we received at the festival was a jar of Ballymaloe Marmalade. That lovely gin and marmalade reminded me of an amazing cocktail created by Salavatore Calabrese, head barman of The Playboy Club in London - the Breakfast Martini". 

Ingredients:

50 ml Beefeater Gin
10 ml Cointreau
15 ml lemon juice
1 bar spoon of Ballymaloe Marmalade

Method: 

Chill a martini glass with some ice. Stir the marmalade and lemon into the shaker. Place in the gin and cointreau with a lot of ice. Seal it and shake hard for 20 seconds. Remove the ice from the glass and fine strain into the glass. Garnish with a wee sliver of buttered toast!
