On tonight's Tom Dunne Show, Oisin Davis of Great Irish Beverages makes a Kilkenny Mexicana cocktail.
Oisin says..."Right outside the town of Kilkenny lies a beautiful wee spot called Highbank Orchard. They produce the largest amount of organic apples in Ireland, a lot of which goes into their Highbank Orchard Apple Syrup. A fantastic product that's often called Ireland's maple syrup, as it's rich, naturally sweet and goes great on pancakes. But of course, booze-hounds like me use it in cocktails. I first stumbled across it at a food fair in 2011 and the following day lashed some into a daiquiri. Since then I've put it into lots of whiskey cocktails and punches. So it came as no surprise to me that it would work equally well with some nice tequila".
Ingredients:
50 ml Patron Silver Tequila
5 ml camomile syrup
5 ml Highbank orchard apple syrup
10 ml fresh lemon juice
5 ml Lillet
Method:
Chill a coupe glass with some ice. Place all ingredients in a shaker, fill with ice and seal. Shake hard for twenty seconds. Remove ice from the glass and strain the cocktail.
