Oisin Davis, of Great Irish Beverages, makes an Orange & Lavender Sour on tonight's Tom Dunne Show (10pm to midnight).
Oisin says, " It may well be April, but this might just be our Irish summer folks. So you should bloody well make the most of it! When the sun hits my face, my internal instinct is to reach for the shaker and mix up something that's light and sessionable...the kind of drink that I can enjoy a few times over and gets better every time. This wee drink certainly fulfils that role. It was made for me many moons ago in a Boulder Colorado cocktail bar, whereupon I first sampled the lovely Patron tequila. The bartender said that he liked to mess around with margaritas and give them wee twists. And that's what this drink is. The next day, I went for a skinny dip in the freezing cold Colorado River. Best hangover cure ever, but thats another story!

50 ml Silver Patron
5 ml Cointreau

Chill a coupe or martini glass with some ice. Pour the lemon juice and egg white into a shaker, seal it and shake it for a few seconds. Then pour in everything else and fill the shaker with ice.
