On tonight's show Oisin Davis, of Great Irish Beverages, makes a special cocktail in honour of the programme's late film critic George Byrne, who sadly passed away last week.
Oisin says, 'He was genuinely, one in a million. A truly unique character who you could chat to for hours on end. I consider myself so extremely fortunate to have spent the last year or so sharing cocktails, stories and rants with him and Tom, live on national radio every Thursday night. Alas, I couldn't make it to his funeral so I want to pay him some respect in another kind of way. I made up a cocktail that I've named after him. It's got some ingredients in it that I know he loved and just like him, it doesn't hold back! Rest in peace George. Sláinte!
The El Georgio Byrnio:
INGREDIENTS:
10 ml Havana Club 7 year old rum
10 ml Hennessy VSOP cognac
10 ml Benedictine
1 dash of orange bitters
1 dash of pernod absinthe
1 dash of creole bitters
5 ml fresh lemon juice
Champagne to top up
METHOD:
Chill a champagne flute with some ice or keep it in your freezer. Place the rum, brandy, benedictine, bitters and lemon juice in shaker with some ice. Get the lid on and shake it hard for 15 seconds. Fine strain into the champagne flute and top up with the champagne. Garnish with a lemon twist.
