Oisin Davis, of Great Irish Beverages, is making a tequila cocktail this week called Lily's Punch. 

Oisin says, "Since the start of this year, I have subjected Tom and George to mocktails, low alcohol cocktails and then because of Dublin whiskey fest, a load of Irish whiskey cocktails. At this point in time, I feel like I should give the lads a bit of a treat and reward them for their patience! And as he often tells us, Mr. Dunne is quite the tequila fan, so I thought I'd give him up this wee tipple. I came up with it to serve for my friend Lily Ramirez Foran when she asked me to make a suitable punch for the opening of her Mexican food store Picado on South Richmond Street. Not only does this drink feature that Mexican staple tequila, but it's also got plenty of lime, hibiscus and guava, very popular ingredients in Lily's native country. If you fancy doing something different with a bottle of tequila, give this one a lash. You can pick up the guava and hibiscus in any Asian store. This is enough to make for a whole gang of people!"

INGREDIENTS:

1 bottle of Patron Silver Tequila
2 litres of guava juice
100 ml benedictine liqueur
100 ml water
The zest and juice of 6 limes
1 tablespoon of angostura bitters
100 g of dried hibiscus flowers
1 teaspoon of rose water

METHOD:

Place the guava juice in a pot along with the hibiscus flowers and lime zest and water. Put a lid on it and bring it to the boil. Then let it simmer for 15 minutes.
Strain out into a punch bowl and let it cool off. Then add in everything else. When you're ready to serve, shake some with a lot of ice and strain into a party cup over more ice and maybe a lime wheel.
