On tonight's programme we are paying homage to 'The Silence of the Lambs', the number one film across the globe this very week, twenty four years ago. Oisin Davis is making a Chianti Sour to pay tribute to the legendary movie...
Oisin says, '"A census taker once tried to test me. I ate his liver with some fava beans and a nice Chianti". And so went the greatest product placement for beans and wine in movie history. This day 24 years ago, Silence of the Lambs was the number 1 box office attraction in Ireland and pretty much every other country in the world with cinemas. So I was asked would I look at rolling out a cocktail for tonight's show that somehow paid homage to this outstanding film. Now I do love a challenge but there wasn't an awful lot that I could do with fava beans in a mixed drink. But there's lots of nice ways to get a good Chianti into a cocktail. Like this wee riff on the NY Sour'.
INGREDIENTS: CHIANTI SOUR

50 ml Jameson Black Barrel

15 ml lemon juice

10 ml sugar syrup

2 dashes of angostura bitters
- Egg white
METHOD
Chill a tumbler with some ice. Place all ingredients except the wine in a shaker with some ice. Shake hard for twenty seconds and strain into the glass. Gently pour the wine onto the back of a spoon on top of the drink. Sláinte!
