Once again, Oisin Davis of Great Irish Beverages brings us a recipe made from all Irish ingredients.

We are now into Day 4 of the Irish Cocktail Fest! Exactly 92 venues dotted around the island of Ireland are on board and each one of them has created a special cocktail that features an Irish spirit as the leading ingredient. But in addition to all the venue activity, there have been some interesting pop up events. Earlier this evening there was a Bán Poitín event at Charlotte Quay where Ireland's native spirit was mixed into some delicious cocktails and paired with some lovely tapas. Tomorrow Raise The Bar Cocktails in Cork are doing a "Sip and Slaughter Pop Up" that celebrates Irish cocktails and carnivorous dishes!
And last night the Club & Cidona Pop Up over in The Jar in Wexford Street opened up and runs til Friday. Three different cocktails are being made with Jameson and Dingle Gin along side Club Orange, Club Lemon and Cidona. It's a great way to sample legendary Irish soft drinks in brand new and exciting, rather boozy ways! This one here is light, refreshing and has a sharp citrus kick.
Ingredients:
- 50 ml Dingle Gin
- 4 cucumber slices
- 10 ml sugar syrup
- 15 ml lemon juice
- 100 ml Club Lemon
Method:
Chill a long glass with ice. Muddle the cucumber, sugar, lemon and gin for 10 seconds in a shaker. Fill it with ice, seal it and shake it hard for 10 seconds. Double strain into the glass and top up with Club Lemon. Garnish with a cucumber slice.
