They're the team that gave England it's second painful Euro-shun within the space of a week, their football commentator screams with joy like there's no tomorrow, and they even have a celebratory dance to match the Haka. It's Iceland!

So in keeping with our theme of looking at drinks from the The Euro 2016 nations, I am making a rather Icelandic cocktail tonight. It's primary ingredient is the super slick & smooth Icelandic vodka, Reyka. It's made with arctic spring water and filtered through lava rock, thus giving it some very unique characteristics. I'll be shaking it up with some other bits and pieces to make a rather summery cocktail called the Cucumber and Lavender Collins....

Ingredients:

  • 50 ml Reyka Vodka
  • 20 ml lavender syrup
  • 20 ml lemon juice
  • 3 cucumber slices
  • 100 ml soda water

Method:

Chill a long glass with some ice. Muddle the cucumber, lemon and lavender syrup in a shaker for about 10 seconds. Add in the vodka and ice, seal it and shake it for 10 seconds. Double strain the cocktail into the glass and top up with soda water. Garnish with a cucumber slice and lavender sprig.
