On this evening's programme, Oisin Davis of Great Irish Beverages, makes a special Lavender Gin Fizz.
Oisin says, 'At this time of the year, I get given an awful lot of people's unwanted fruits. It's like my office turns into The Abandoned Autumn Fruit Orphanage. But my family and mates know me well. They're aware that I'll always have something that I can do with some bruised cooking apples or gnarly looking berries. Invariably they'll either be doused in booze or cooked into a cordial. Either way, they'll be utilised into something random and boozy.
Last week, I was literally passing someone's abode on my bike and a pal grabbed a fistful of lavender and shoved it into my metrosexual man-bag. It was added to some sugar syrup and here's what I'm doing with it:
INGREDIENTS:
50 ml Beefeater Gin
10 ml lavender syrup
15 ml lemon juice
Sparkling water
METHOD:
Place all ingredients except the sparkling water into a shaker. Seal it and shake hard for 10 seconds. Strain into a long glass filled with ice.Top up with sparkling water. Garnish with a lemon slice.
