We have finally reached the last week of Liebfrau-March, and Oisin Davis of Great Irish Beverages brings us the last installment of this winederful month, the Madeira Cobbler.
Oisin says: "So there's 5 Thursdays in #LiebFrauMarch - the universe is obviously telling us that we needed to have an extra day of enjoying cocktails made with wine. And as I was saying last week, we need to be consuming more of the drinks that our grannies used to have. Like sherry, port and good old fashioned madeira.
This one is a classic cocktail and any dry fortified wines such as sherry could be substituted if you don't have any madeira. It needs crushed ice so if you don't have access to a blender you can always get normal ice, wrap it up in a tea towel and smack the bejaysus out of it. In fact, even if you have a blender, you should just do this anyway. It's extremely gratifying".
INGREDIENTS
- 75 ml dry Madeira
- 10 ml demerara sugar syrup
- 2 orange slices
- 1 or 2 raspberries to garnish
METHOD:
Place an orange slice in your serving and muddle it slightly. Mix the madeira and sugar syrup in another vessel such as a small jug. Fill the glass with the crushed ice and pour in the madeira and sugar. Garnish with the other orange slice and raspberries.
