This one is worth the effort... promise!
Oisin says:
Most of the time on the show, I like to look at making drinks that are easy to make with easy to source ingredients. This is because I'd love for people to give them a lash back at home. But every now and then, I need to be able to shine a light on a beverage that may not be as easily replicated in a domestic setting. Simply because it just tastes so bloody good and we're worth it!

Tonight's offering would fall into that category. The recipe was very kindly given to me by one of Ireland's finest bartenders, Mr. Pat Thomas. You can find him stationed over at Zozimus on Anne's Lane in Dublin. This cocktail will be the bar's specially made creation that they've submitted for the Irish Cocktail Fest, running from October 10 - 15. It features the beautiful Shortcross gin which is distilled on the Rademon estate in county Down with local wild botanicals. This is why ingredients like the elderberry syrup and hedgerow bitters in this cocktail work so well with the gin. And the spices and citrus in the cocktail bounce off everything in perfect harmony.
When the festival starts, be sure to pop down and sample this beaut!
Ingredients:
- 35ml Shortcross gin
- 15ml Suze
- 15ml grapefruit and elderberry syrup
- 25ml lemon juice
- 2 dashes Cuffe hedgerow bitters
- Herbal Crest lemongrass and ginger soda to top up
Method:
Combine all the ingredients except the soda in a shaker filled with ice. Seal it and shake hard for ten seconds. Strain into a chilled champagne flute and top up with the soda. Garnish with a grapefruit twist.
Oisin will be making the cocktail live on the Tom Dunne Show, tonight from 10pm
