As the spring rolls in and the days get warmer, Oisin Davis of Great Irish Beverages brings us the recipe for a fantastic frozen cocktail that he calls the 'Highbank Cooler'.
Oisin says: "We have a theme for April! After lengthy debates in the Newstalk boardroom that may or may not have involved the highest echelons of company management, it has been decreed that we will be celebrating #AppleyApril for the next few Thursdays. In case you haven't guessed it, that mean cocktails made with apples in all its glorious forms!
And so to start off this momentous culinary experiment of booze, I am using one of my all time favourite Irish products, Highbank Orchard Apple Syrup. It's straight outta Kilkenny and tastes whopper.
To make this drink, you will need a nutri-bullet or a blender that can crush ice without liquefying it. A lot of people seem to have nutri-bullets that are most likely collecting dust after their January detoxes…"
INGREDIENTS
- 75 ml Tio Pepe Fino sherry
- 25 ml Havana Club 3 year old rum
- 20 ml Highbank Orchard apple syrup
- 20 m lemon juice
- A scoop of ice
METHOD:
Lash the whole lot into a nutri-bullet and blitz until a slushee. Pour into a wine glass and garnish with an apple slice. Drink with a straw.
