I have always been a great fan of Galway city. As a nipper, my summers were spent in the arcades of Salthill playing video games and trying to cheat a few extra pence out of the coin fountains. As an adult, I have loved it's arts festival, the oyster festival and of course, their whiskey trail.
And now I have another reason to love this wonderful town as it now has its own gin. It's called Eglinton Galway Gin and they are one of the brands on board for the Irish Cocktail Fest that's taking place from October 10-15.
This cocktail comes from The Blue Note in Galway, a very lively bar on William Street West. It's their festival cocktail and I wholeheartedly recommend it!
Ingredients:
- 35 ml of Eglinton Galway Gin
- 10 ml of hibiscus syrup
- A slice of orange
- 3 basil leaves
- Poacher's Premium Irish Tonic Water
Method:
Muddle the gin, basil and orange slice into a shaker for about 10 seconds. Fill it with ice, seal it and shake it hard for 10 seconds. Fine strain into an iced long glass and top up with the tonic water.
