Oisin Davis, of Great Irish Beverages, joins Tom to make the second in his series of festive cocktails. Tonight's yuletide delight is the Hot Buttered Whiskey. 

Oisin says, “If you want to serve a sweet spicy drink, that warms you through, gives you a Christmassy glow and has the smoothest yet booziest finish you'll ever experience with a hot beverage, then please take my lead and make one of these bad boys. Many of you may have experienced a hot buttered rum before, it’s a Yuletide classic. The butter gets spiced and sweetened with dark sugar and then stirred in with a dark rum and some boiling water. The butter and sugar melt but the spices cling to a little of the butter and sit at the top to create a smooth head on the drink. And what's cool is that it works equally well with brandy or with some Irish whiskey. Considering many of you will have some whiskey to hand during Christmas, this is well doable!”

INGREDIENST:

250g unsalted butter
200g demerara sugar
1 teaspoon of cinnamon
1/2 teaspoon of ground nutmeg
1 pinch of ground cloves
1 pinch of salt
1/2 vanilla pod, inside scooped out
Irish whiskey

METHOD:

Combine all ingredients in whisking bowl then scoop them into a small bowl. Cover it in cling film and leave it over night in the fridge. For each serving, place 1.5 teaspoons of the butter mix into a cup along with a shot of quality Irish whiskey. Top it up with boiling water and stir it. Let it sit for a couple of minutes before you serve. Garnish with a cinnamon stick.
